Pectinase and efficient amylase were applied to clarify of lycium juice, compared the clarifying effect of pectinase and efficient amylase on lycium juice at the different conditions of concentration, temperature, pH and reaction time. The result is that efficient amylase can tremendously increase soluble solids, but has poorly efficient in clarifying lycium juice. Pectinase does better in clarifying the lycium juice than efficient amylase, it can's increase soluble solids content in the lycium juice. The best technique conditions are addition of 0.004% pectinase, pH 4.0, temperature of 60 ℃, reaction time of 3 h.
