Abstract
A new type functional milk beverage was developed using mulberry juice and pure milk as main materials.The producion technology and the quality of the final product were studied.Orthogonal experiment showed that the best formula was as follows:10% sucrose,0.2% citrate,0.4% mulberry flavoring,and 0.1% xanthan gum.With this formula,a high quality beverage was achieved.
