Abstract
Abstract Odor threshold studies of highly purified forms of 2-ethyl-3,5-dimethypyrazine and 2-ethyl-3,6-dimethylpyrazine in water solution showed that the -3,5- isomer was a much more potent odorant with a threshold of 0.04 μg / L compared to that of 8.6 μg /L for the -3,6- isomer, thus confirming reported aroma extract dilution analysis air diluted GC effluent threshold measurements on these compounds.
