Abstract
4-Hydroxy-2,5-dimethyl-3(2H)-furanone (1, furaneol, registered trademark of Firmenich) and 2-(or 5-)ethyl-4-hydroxy-5-(or 2-)methyl-3(2H)-furanone (2, homofuraneol) are potent flavour compounds contributing to the sensory properties of many natural products and thermally processed foods.' They give a caramel-like, sweet flavour and have low retronasal odour thresholds, viz 160 and 20 pg kg-' water, respectively.2 Homofuraneol exists in the tautomeric forms 2a and 2b in a ratio of 1:3 to 1:2.2,3 However, only 2a is odo~r-active.~ xex OK
