Abstract
Abstract This study describes the stereospecific hydrolysis of racemic menthyl acetate to 1-menthol by Bacillus subtilis . The reaction takes place in a liquid-liquid system because of the water-insoluble nature of the substrate, menthyl acetate. Reaction rate in a 50 ml stirred tank was maximal above 800 rev min −1 . The observed activity was highest with 25% (v/v) menthyl acetate in the reactor. As bacterial concentration in the aqueous phase was raised above ≈ 25 mg ml −1 , the observed specific activity fell, until at 67 mg ml −1 the reaction rate was also lower. At concentrations > 36 mg ml −1 the apparent viscosity of the bacterial suspension rose rapidly.
