Abstract
Abstract The mode of the binding of the anionic surfactant, sodium N-methyl N-oleoyltaurine, by gelatin in the pH region beyond the isoelectric point, where solutions are stable without precipitation, was investigated by acidimetric titration and by viscosity measurements. The stoichiometric ratio of anionic surfactant to cationic groups of the gelatin reaches 1:1 at the equivalent point. According to experimental conditions, such as pH, ionic strength, and gelatin concentration, proton acceptance and viscosity are related to conformational changes resulting from the breaking off of zwitterion couples. A simple acidimetric titration can be used to quantify the interaction of anionic surfactants with gelatin.
