Abstract
Citric Acid Esters of Mono-and Diglycerides(CITREM) is widely used as an antioxidant, emulsifier, chelating agent, stabilizer and thickener in dairy product, meat product, beverage and ice cream in both European and America. But it wasn't allowed to be used in the fat products in our country until the 5th announcement issued by Sanitation Department of P. R. China in 2006. The maximum dosage is 10g/kg. The paper summarizes the characteristics of food emulsifier-Citric Acid Esters of Mono-and Diglycerides(CITREM), its functions in food and its related regulations. This will provide the useful reference to the food processing enterprises.
