Abstract
Neohesperidin dihydrochalcone (NHDC) is an intense sweetener which at low concentrations is several hundred times sweeter than sucrose and which is remarkably stable over a wide range of pH and temperature. The allocation of an Allowed Daily Intake of 5 mg/kg bw by the EEC Scientific Committee has recently paved the way for the market introduction of this sweetener which is produced on a large scale from naturally occurring neohesperidin by simple hydrogenation. NHDC may be used in table-top products, beverages and different foods because of its sweetness and taste-enhancing properties, its masking effect on bitter and salty components of food and its high stability under nearly all conditions of use
