Abstract
Thermally induced decarborylation of ferulic acid (4-hydroxy-3-methoxycinnamic acid) (2b) in the presence of benzyl alcohol produces 1-(4-hydroxy-3-methoxyphenyl)ethyl benzyl ether (10). A similar reaction with starch also produced an ether-linked product and suggested a mechanism for the incorporation of phenolic moieties into food macromolecules during cooking
