Abstract
The saponification of α-monomyristin, α-monostearin and α-mono-olein has been studied in 75% (v/v) aqueous alkaline acetone. The reactions obey a second-order law. The energies of activation for the three monoglycerides are very similar: α-monomyristin, 9900; α-monostearin, 11,100; α-mono-olein, 10,800 g.-cal. The glycerides show the general phenomenon of alcoholysis in aqueous alkaline ethanol solutions.
