Abstract
Abstract The elucidation of the structure of a sulfur-containing compound with vitamin B6 activity formed during heat sterilization of evaporated milk is presented. The compound was found to be bis-4-pyridoxyl disulfide (IV). Hydrogenolysis of IV with Raney nickel catalyst gave deoxypyridoxine (V). Treatment of IV with tin and dilute hydrochloric acid at 25 ° yielded 4-pyridoxylmercaptan (VI). The latter was easily oxidized to the disulfide IV with air at pH 8.5.
