Abstract
Abstract The triglyceride 1-(5-hydroxy)-dodecanoyl-2,3-dihexadecanoyl glycerol was synthesized and shown, along with the corresponding 5-hydroxy-dodecanoic acid, to be one of the precursors of δ-dodecalactone. Gas-chromatographic analyses were carried out on the hydroxy-substituted triglyceride, the hydroxy-acid, the corresponding oxotriglyceride and oxo-acid, and the δ-dodecalactone, before and after heat treatment. The hydroxy-triglyceride and the hydroxy-acid hydrolyzed and lactonized readily to form δ-dodecalactone. The related oxo-triglyceride and oxo-acid did not form the lactone. The mass spectrum of the mixed triglyceride containing a hydroxy substituent is presented.
